Worth knowing: Morning and weekend lines can extend outside the shop. The concentrated coffee delivers a pronounced caffeine hit. Some pre-batched preparations cannot be made substantially less sweet at the counter.

Vietnamese phin-only coffee bar using long batch brews for concentrated iced coffee, egg-yolk coffee, coconut drinks, and matcha.

There is no espresso machine: Saigon says every coffee passes through Vietnamese phin filters, including custom oversized filters used for a four-hour batch process. The resulting profile is dark, strong, and concentrated. The artisan Hanoi egg-yolk coffee softens it with pasteurized egg cream, while condensed milk and coconut preparations provide classic sweet counterpoints.
